CARAMEL NUT ROLLS|
1/2 lb. caramel candies (28)
2 Tbsp. half and half or milk
1 c. salted peanuts
1 c. flaked coconut
1/4 c. butter or margarine
1 1/2 c. confectioners sugar
2 c. miniature marshmallows
In 2-quart casserole or mixing bowl, place caramels,
butter and half and half. Microwave at 50% (Medium) 3 to 5
minutes or until melted and smooth, stirring after 2 minutes,
then every minute. Stir in sugar until smooth, then peanuts.
Stir in marshmallows, using as few strokes as possible.
Sprinkle 2 large sheets of wax paper with coconut. Spoon half
the caramel mixture in strip on each sheet. Shape into 10 or
12-inch rolls, using wax paper to help shape; coat well with
coconut. Wrap; refrigerate. To serve, cut into 1/2-inch
slices. Makes 2 pounds (48 pieces).
