FIVE GRAIN QUICK BREAD

1/2 c. all-purpose white flour
1/2 c. whole wheat flour
3/4 c. 40% bran cereal
1/2 c. quick cooking rolled
oats
2 Tbsp. wheat germ
1/4 c. corn meal
2 tsp. baking powder
2 Tbsp. vegetable oil
3 Tbsp. brown sugar
2/3 c. skim milk
2 eggs

Blend all ingredients in medium mixing bowl. Line
bottom of 9 x 5-inch loaf dish with wax paper. Spoon batter
into dish. Shield ends of loaf dish with 2 1/2-inch strip of
foil, covering batter with 1 1/2-inches and molding remainder
around handles. Microwave at 50% (Medium) 6 to 11 minutes or
until bread tests done, rotating dish 1/4 turn every 2 to 3
minutes. Test by touching top lightly; it should spring back.
Look through bottom of glass baking dish; no unbaked batter
should appear. Let stand on counter 5 minutes. Turn bread
out. Remove wax paper. Cut into slices. Serves 24. Contains
Per Serving: 51 calories, 66 mg. sodium, 23 mg. cholesterol.
