1 c. all-purpose flour
1/2 c. cooked or canned
1/2 tsp. cinnamon
1/4 tsp. ginger
1/8 tsp. cloves
3 Tbsp. milk
3/4 c. packed brown sugar
1/2 tsp. soda
1/2 tsp. salt
1/4 tsp. baking powder
1/4 tsp. nutmeg
1/4 c. shortening
2 eggs

Place all ingredients in mixing bowl. Blend at low
speed, then beat at medium speed 2 minutes. Spread batter in 1
or 2 nine-inch round, 8 x 8-inch or 10 x 6-inch baking
dish(es). Microwave 1 layer at a time at 50% (Medium) 6
minutes, rotating 1/4 turn every 3 minutes. Increase power to
High. Microwave 2 to 5 minutes or until done. Let stand on
countertop 5 to 10 minutes.
Note: For a two-layer cake, double the ingredients.
Substitute 1 teaspoon (2 teaspoons for double layer) pumpkin
pie spice for spices in recipe.
