SPINACH CASSEROLE 1 (10 oz.) pkg. frozen chopped spinach 2 eggs, beaten 2 Tbsp. milk 1/4 c. cottage cheese 1/4 c. grated sharp Cheddar cheese 1/8 tsp. salt 1 c. herb seasoning stuffing mix Pierce package of spinach several times. Place on paper plate. Microwave at High for 3 minutes or until spinach can be separated. Combine eggs, milk, cottage cheese, Cheddar cheese, salt, stuffing mix and spinach. Spread mixture evenly in a greased 1 to 1 1/2 quart glass casserole. Microwave at High 5 to 7 minutes. Let stand 2 to 3 minutes before serving. Makes 4 servings.
