CORDON BLEU
(Microwave Chicken)
2 chicken breasts, de-boned
2 slices boiled ham (or
deli-sliced roast beef)
2 slices Swiss cheese
2 Tbsp. melted butter
1/2 c. Ritz cracker crumbs

Cut each chicken breast in half. Pound flat with
mallet. Cut cheese and ham slices in half. Take 1 pounded
chicken piece and place 1 piece of ham on top. Lay piece of
cheese on top of ham. Roll up and secure with toothpicks. (do
same for 3 other chicken pieces.) Brush roll-ups with butter
and sprinkle cracker crumbs all over each roll-up. Place in 8
x 12-inch baking dish (microwave safe), cover loosely with
waxed paper. Microwave on "Hi" for 6 1/2 minutes. Turn dish
around and bake 6 1/2 minutes more. Makes 4 servings.
