1/2 c. long grain rice
1/3 c. chopped tomato (seeds
1 green onion, thinly sliced
1 Tbsp. chopped green pepper
1 tsp. olive oil
2 Tbsp. snipped fresh parsley
Prepare rice as directed; set aside. In 1-quart casse-
role, combine tomato, green onion, green pepper and olive oil.
Microwave at High 1 to 2 minutes or until vegetables are
tender-crisp. Stir in parsley; stir vegetable mixture into
rice and spoon rice mixture into greased 2 1/2-cup ring mold.
Press gently. Cover with waxed paper. Microwave on High 2 to
3 minutes or until heated. Invert onto serving plate.
