STUFFED PEPPER POT

4 large green peppers
1 lb. ground beef
1 small onion, chopped
2 c. cooked rice
1 can tomato sauce (8 oz.)
2 Tbsp. chopped celery
1 tsp. salt
dash of pepper

Cut thin slice from stem end of pepper; save. Remove
seeds and discard. In 1 1/2-quart glass casserole, combine
beef and onion; cook 2 to 3 minutes on High in microwave (or
until onion becomes transparent and beef slightly brown). Add
remaining ingredients (except peppers) and mix well. Stuff
peppers with mixture and place on baking sheet and replace the
top slice of peppers. Place piece of plastic wrap over top and
microwave 12 to 15 minutes on Bake cycle or 80% power.
