8 oz. can tomato sauce
1 medium onion, chopped
1/4 tsp. basil
1/4 tsp. salt
1/8 tsp. pepper
1/4 tsp. oregano
1 c. Ricotta cheese
1/2 c. Mozzarella cheese,
3 medium zucchini
1 large tomato
1/2 tsp. parsley flakes
Mix tomato sauce, onion, basil, salt, pepper and oregano
together in bowl; set aside. Cut zucchini from end to end,
lengthwise. Cook 6 to 8 minutes on High. Layer zucchini,
cheeses, tomato sauce, sliced tomatoes and parsley; repeat
layer(s). Cook, uncovered, 20 to 25 minutes on 50% power.
Sprinkle with Parmesan cheese.
