HAM WITH APRICOTS 3 (3 1/4 lb.) center cut ham slice (2 inches thick) 1 (1 lb.) can apricots, undrained 1/4 c. packed brown sugar 2 Tbsp. cornstarch 2 Tbsp. vinegar 1/4 tsp. nutmeg 2 Tbsp. butter or margarine Trim fat from ham slice; score edges. Place in a 2 quart glass baking dish. Combine apricot juice, brown sugar, cornstarch, vinegar and nutmeg in small mixing bowl; pour over ham. Top with apricots. Dot with butter. Microwave on roast for 20 to 25 minutes or until ham is hot and sauce is thick- ened. Turn halfway through cooking time. Let stand 5 minutes before serving. Yield: 6 to 8 servings.
