MICROWAVE PINEAPPLE UPSIDE-DOWN CAKE 1/4 c. butter or margarine 1 can (8 1/2 oz.) sliced pineapple, drained and juice reserved 1/2 c. (reserved) pineapple juice 2 eggs 1/2 c. brown sugar maraschino cherries 1 pkg. (9 oz.) yellow cake mix (1 layer size) Combine butter and brown sugar in 8 x 8-inch baking dish. Microwave 1 minute 30 seconds to 2 minutes on High or until melted. Stir. Arrange pineapple rings in syrup. Place maraschino cherries in center of each ring. Blend cake mix, pineapple juice and eggs in mixing bowl on low speed of electric mixer. Beat on medium speed 2 min- utes. Pour evenly over fruit. Microwave using 3/4 of power for 8 minutes, rotating dish twice. Bake on High for about 3 minutes and check for doneness or microwave 8 1/2 to 10 minutes on High or until wooden toothpick inserted in center comes out clean. Rotate dish.
