HOLLANDAISE SAUCE 1/2 c. butter 2 Tbsp. lemon juice 1 egg, lightly beaten salt and pepper to taste Put butter in a 2 quart glass measure. Microwave on Cook for 2 1/2 to 4 minutes, until melted. Beat in egg, using wire whisk. Microwave, uncovered, on Low for 1 1/2 minutes or until egg appears slightly set. Beat in lemon juice. Whisk briskly. Season with salt and pepper. Use at once with fish or vegetables.
