CREAMED SPINACH

2 (10 oz.) pkg. frozen,
chopped spinach, thawed and
drained
1 1/2 Tbsp. flour
1/8 tsp. ground nutmeg
1/4 tsp. pepper
2 Tbsp. butter
2 Tbsp. finely chopped green
onion
1 c. whipping cream
1/2 tsp. salt

Combine spinach, butter and onion in a 1 1/2 quart
casserole. Cover and microwave on Cook for 4 1/2 minutes,
stirring twice. Stir flour into spinach until smooth. Stir in
remaining ingredients. Microwave on Cook for 5 to 6 minutes,
until mixture boils and thickens, stirring twice. Let set 5
minutes.
