2 (10 oz.) pkg. frozen,
chopped spinach (be sure to
thaw and drain)
2 eggs
1/2 tsp. salt
1/4 c. buttered bread crumbs
1 c. cottage cheese
1/2 c. grated Swiss cheese
1/4 c. grated Parmesan cheese
1/2 tsp. ground thyme
1/4 tsp. pepper

Combine all ingredients, except crumbs, in a 2 quart
bowl. Blend together thoroughly. Pour into a well greased
(with butter) microwave safe 6 to 8 cup ring mold. Cover with
wax paper. Microwave on Cook for 9 to 10 1/2 minutes or until
mold is set. Let stand, covered, for 5 minutes. Turn out onto
serving platter. Sprinkle with bread crumbs. Fill center with
scrambled eggs or a creamed food.
