1 c. long grain rice
1/4 c. finely chopped onion
2 1/4 c. chicken broth
1/8 tsp. ground thyme
6 Tbsp. butter or margarine
1/4 c. finely chopped celery
1 small bay leaf
1/4 tsp. each salt and pepper
Combine rice and butter in a 2 quart casserole. Micro-
wave, uncovered, on cook for 2 1/2 to 4 minutes. Add onion and
celery. Microwave, uncovered, on Cook for 4 to 5 minutes
longer until vegetables are softened. Stir in remaining
ingredients. Cover. Microwave on Cook for 6 minutes, then on
Low for 15 minutes, stirring twice. Let set 5 minutes.
