CHEESE SOUFFLE

1/3 c. flour
1/2 tsp. salt
1/2 tsp. white pepper
6 eggs, separated
2 Tbsp. butter, cut into pats
1 1/2 c. milk
1 c. shredded Swiss cheese
1/2 c. grated Parmesan cheese
1/2 tsp. cream of tartar

Place flour in a 4 cup glass bowl. Add milk and beat to
make a smooth paste. Stir in salt and pepper. Microwave,
uncovered, on Cook for 4 to 6 minutes. Stir every minute. Add
cheese and butter. Stir until butter melts. Stir in all
yolks. Beat whites with cream of tartar in bowl until moist
and stiff peaks form. Gently pour cheese mixture on top. Fold
in with plastic spatula. Pour into ungreased 2 quart casserole
or souffle dish. Microwave on Low for 38 to 45 minutes or
until set.
