ONIONY ONION SOUP|
3 c. onions, sliced thin
3 (10 oz.) cans beef broth
1 1/2 c. shredded Swiss cheese
4 Tbsp. butter
thinly sliced and toasted
1/4 c. Parmesan cheese
Combine onions and butter in a 3 quart glass casserole.
Microwave, uncovered, on Cook for 7 1/2 to 10 minutes until
onions are very soft, stirring twice. Add beef broth and
cover. Microwave on Cook for 5 minutes; stir, then 9 minutes.
Stir once after 3 minutes. Ladle soup into 4 individual bowls.
Cover with bread slices and sprinkle with 2 cheeses. Microwave
on Cook for 8 to 11 minutes until cheese melts and bubbles.
