CANDIED YAM PORK CHOPS|
4 to 6 pork chops
pinch of ground cinnamon
1 large orange, sliced thin
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. sage
2 (16 to 18 oz.) cans candied
1/2 Tbsp. cornstarch
pinch of ground nutmeg
2 Tbsp. orange juice
Arrange chops in a 10-inch round baking dish. Sprinkle
with salt and pepper. Cover and microwave on Cook for 15
minutes. Slice yams thick and arrange on top of chops.
Sprinkle with sage, cinnamon and nutmeg. Top evenly with
orange slices. Cover. Microwave on Cook for 10 to 12 minutes
or until chops are tender. Remove chops and yams to serving
platter and cover. Blend orange juice and cornstarch; add to
pan juices, blending well. Microwave, uncovered, on Cook for 2
1/2 to 4 minutes until sauce is thick and bubbly. Spoon over
