1/2 lb. ground beef
1/2 tsp. parsley
1/2 tsp. oregano leaves
1 (8 oz.) can chopped tomatoes
1/4 tsp. salt
2 cloves garlic, chopped
1/8 tsp. whole thyme leaves
1/8 tsp. pepper
1/4 c. cracker crumbs
1/4 c. Parmesan cheese
Combine all ingredients, except tomatoes and last 1/2
cup of cheese. In bowl shape mixture into 1/2-inch meatballs.
Arrange in a 10-inch round baking dish. Microwave on Cook for
3 to 4 minutes or until meatballs are nearly done. Pour
chopped tomatoes over meatballs and sprinkle on remaining
Parmesan cheese. Cover and microwave on Cook for 3 minutes
until heated through.
