BEEF STEW

2 lb. beef stew meat
1/2 c. beef broth
1/2 c. cold coffee
1/2 tsp. salt
1/2 tsp. thyme leaves
1 (16 oz.) can tomatoes
2 medium carrots, sliced
1/4 tsp. pepper
1/4 c. flour
2 medium potatoes, cubed
2 medium onions, cubed
2 Tbsp. oil or bacon drippings
2 celery stalks, sliced
1 Tbsp. tomato paste

Combine meat and oil in a 3 quart casserole. Cover.
Microwave on Cook for 10 minutes, stirring once. Stir flour
into meat. Add remaining ingredients. Cover. Microwave on
Cook for 10 minutes, then Low for 76 minutes. Stir after 30
minutes cooking time. If meat is not fork tender, microwave
another 19 minutes on Low.
