STUFFED FLANK STEAK 1 beef flank steak, cut in half 1 (10 oz.) pkg. chopped spinach, drained 1 clove chopped garlic 1/4 tsp. each salt and pepper 1/4 c. white wine 1 c. chopped onion 4 Tbsp. butter or margarine 1 (10 oz.) can condensed cream of mushroom soup 1/8 tsp. ground thyme 1 c. strong beef broth Combine onion, garlic and butter in glass bowl. Micro- wave, uncovered, on Cook for 6 to 7 1/2 minutes, stirring once. Pound out flank steak to flatten. Spread spinach mixture on steak. Roll up. Tie with string or skewer with wooden picks. Put in a 2 quart casserole. Combine remaining ingredients and pour over steak. Cover and microwave on Cook for 15 minutes. Turn steaks over. Cover and microwave on Low for 26 minutes. Let set 10 minutes.
