POACHED FISH FILLETS 4 fish fillets 3 Tbsp. butter, cut into 1/4-inch pieces 1/4 tsp. each salt and pepper 1/2 c. dry white wine or tomato juice 2 Tbsp. chopped green onion Fold fillets in 1/2 and arrange in a small shallow microwave safe baking dish. Put thicker portions facing outside edge of dish. Pour wine over fish. Microwave on Cook for 5 1/2 to 7 1/2 minutes or until fish flakes when prodded with fork. Let set 3 to 5 minutes, covered, or until fish becomes white and firm all the way through.
