BAKED RED SNAPPER|
1 stick butter, cut into
2 1/2 to 3 lb. whole snapper
1/4 c. chopped parsley
1 Tbsp. lemon juice
In a 10-inch round baking dish, combine butter, parsley
and lemon juice. Microwave, uncovered, on Cook for 1 1/2 to
2 1/2 minutes. Stir to combine ingredients. Place fish in
baking dish. Turn once to coat both sides with butter mixture.
Cover with wax paper. Microwave on Cook for 10 to 14 minutes,
turning fish over with large spatula after 5 minutes cooking
time. Fish is done when flesh comes away easily from bones
with fork. Let set 3 to 5 minutes.
