HAWAIIAN CHICKEN 3 lb. cut up chicken 1 Tbsp. lemon juice 1 Tbsp. packed brown sugar 1 (11 oz.) can drained Mandarin oranges (reserve syrup) 2 Tbsp. soy sauce 1/2 tsp. ground ginger pinch of cayenne pepper 3 Tbsp. flour 1 (8 1/4 oz.) can pineapple chunks, drained (reserve syrup) Arrange chicken in 10-inch round baking dish, putting meatier pieces towards the outer edge of dish. Combine soy sauce, lemon juice, sugar, ginger and cayenne pepper together and mix well. Brush mixture over chicken. Cover with wax paper. Microwave on Cook for 13 minutes. Drain the chicken, reserving 1/2 of the liquid (1/2 cup). Arrange chicken pieces, skin side up, in baking dish. Cover with fruit. In a 4 cup glass measure or 1 quart bowl, combine reserved liquid from chicken, 1 cup syrup from fruits and the flour. Blend until smooth. Pour over the chicken and stir. Cover chicken and microwave on Low for 11 to 16 minutes until chicken is fully cooked and sauce is thickened, stirring once. Let set 5 minutes.
