THOMPSON'S CHICKENY TREAT 2 chicken breasts, skinned, boned and halved lengthwise 1/4 to 1/2 c. tomato sauce 4 Tbsp. butter or margarine 1/2 c. bread crumbs 2 Tbsp. fresh chopped parsley 1/2 tsp. ground thyme 4 to 6 slices cooked ham enough Mozzarella or American cheese to cover 3 to 4 Tbsp. grated Parmesan cheese Pound out chicken to flatten. Put between 2 pieces of wax paper. Put a slice of ham and a slice of Mozzarella cheese on each breast half. Spoon on tomato sauce and sprinkle on thyme. Roll up breasts. Fold in sides. Melt butter in a 10-inch round baking dish. Combine crumbs, Parmesan cheese and parsley on a plate. Dip rolls first in butter, then in crumb mixture. Arrange rolls, seam side down, in baking dish. Cover with wax paper. Microwave on Cook for 9 to 13 minutes. Let set 5 minutes. Serve with pan juices.
