FAVORABLE FISH FILLETS 2 tsp. olive oil 1 lb. firm fish fillets lemon pepper 6 Tbsp. margarine 1 Tbsp. lemon juice 1 tsp. cider vinegar 1/3 c. chopped parsley 1/2 c. butter 1/8 tsp. paprika cracker crumbs Brush a 1 1/2 quart micro-safe dish with olive oil. Arrange fish with thickest portion to the outer edge. Sprinkle lemon pepper. Place margarine in 2 cup glass measuring cup. Microwave on High until melted (1 minute). Stir in lemon juice, vinegar and parsley; pour over fish. In separate bowl, combine cracker crumbs and paprika; sprinkle over fish. Microwave on High uncovered, 5 to 6 minutes or until fish flakes easily, turning dish every 2 1/2 minutes. Makes 4 servings.
