1 pkg. frozen broccoli,
1 small onion, chopped
1 can cream of chicken soup
1/2 c. processed cheese spread
1/2 c. Minute rice (double
this amount if you like
lots of rice)
salt and pepper to taste
Place broccoli in a 1 quart glass casserole. Microwave,
covered, on High for 3 minutes, turning after 2 minutes, then
drain. Add onion and mix lightly. Microwave for 3 minutes.
Stir in soup. Microwave, covered, for 3 minutes. Stir in
cheese and rice. Season to taste. Microwave for 1 to 2
minutes longer or until tender. Let stand, covered, until rice
is tender. Serves 4.
