SUMMER GARDEN STEW

1 large zucchini (1 lb.),
cubed
3 large potatoes, peeled and
cubed
4 large carrots, coarsely
grated
1 medium onion, cut in pieces
1/2 small head cabbage, sliced
1 can (10 3/4 oz.) cream of
celery soup
1 can (10 3/4 oz.) cream of
mushroom soup
1 block (8 oz.) processed
cheese, cubed
2 cans (4 oz. each) mushroom
pieces
1 lb. smoked sausage, sliced
in 1-inch pieces

Place zucchini, potatoes, carrots, onion and cabbage in
a 4-quart casserole dish. Cover; microwave at High (10) for 20
minutes, stirring after 10 minutes. Drain well. Add celery
soup, mushroom soup and cheese to the vegetables. Stir until
smooth and well blended. Stir in undrained mushrooms and
sausage. Microwave at High (10) 8 to 10 minutes or until
sausage is heated through. Makes 6 to 8 servings.
