CHEESECAKE CUPS

1 (8 oz.) pkg. cream cheese
1 egg
1 tsp. vanilla extract
canned fruit pie filling
1/3 c. sugar
1 Tbsp. lemon juice
6 vanilla wafers

Soften cream cheese in a 1-quart mixing bowl. Microwave
on Medium 1 minute. Beat in sugar, egg, lemon juice and
vanilla until light and fluffy. Line a microwave-muffin pan
with paper liners. Place a vanilla wafer in bottom of each
liner and fill each 3/4 full with the cream cheese mixture.
Microwave on Medium 2 minutes or until nearly set. Rotate pan
or dish once. Top each with 2 tablespoons of pie filling.
Chill.
