CHEDDAR AND BACON POTATOES|
2 large baking potatoes
4 Tbsp. (1/2 stick) butter
salt and freshly ground pepper
3 slices bacon, crisp and
1 small tomato, seeded and
2 medium size green onions,
2/3 c. sharp Cheddar cheese,
Cook potatoes on High until tender, about 12 minutes.
Make crisscross slices in top of each potato and push open.
Add 2 tablespoons butter to each and mash well with fork.
Sprinkle with salt and pepper. Divide bacon, tomato and green
onion between potatoes. Top with Cheddar cheese. Cook on High
until cheese melts, about 1 1/2 minutes. Makes 2 servings.
