RAISIN BRAN MUFFINS (Microwave) 1 egg 1 c. buttermilk 1 1/4 c. all-purpose flour 3/4 c. brown sugar, packed 1 tsp. baking soda 1/4 tsp. salt 1 c. raisin bran cereal 1/4 c. vegetable oil 1/4 c. nuts, chopped (optional) In small mixing bowl, beat egg and buttermilk. Mix in all other ingredients; stir well. Spoon batter into 6-paper- lined custard cups or microproof muffin pan; fill about half full. Cook 6 muffins at a time on High (maximum power) for 2 to 3 minutes or until no longer doughy. Repeat twice. Yields: 18 muffins.
