CHINESE FRIED RICE (Microwave) 2 Tbsp. butter or margarine 1/4 c. green onion, thinly sliced 3 c. cooked rice 1/2 tsp. salt 1 Tbsp. soy sauce 3 eggs 1 Tbsp. water 1/4 tsp. sugar Place butter and onion in 3-quart microproof casserole; cook on High (maximum power) for 4 minutes or until onion is limp. Stir in rice, salt and soy sauce. In small bowl, beat eggs, water and sugar just until mixed. Pour into center of rice. Cook, covered, on 70 (Roast) for 9 to 10 minutes, or until eggs are set and rice is dry in appearance. Stir eggs into rice after 3 minutes, then stir every 3 minutes until done. Makes 4 to 6 servings.
