NEW ENGLAND CLAM CHOWDER 1 medium onion, finely chopped 2 oz. salt pork, finely chopped 2 Tbsp. butter 2 Tbsp. flour salt and pepper 2 1/2 c. clam broth 2 c. finely diced potatoes 2 (7 1/2 oz.) cans minced clams 1 qt. milk (part cream) Put onion, salt pork and butter in 3 quart glass casse- role dish. Cover and cook in microwave 4 minutes, stirring after 2 minutes. Add flour; mix. Cover and cook 1 1/2 minutes longer. Add seasoning, clam broth and potatoes. Cover and cook 20 minutes longer until potatoes are near tender. Add clams. Cover and cook 5 minutes. Add milk and heat to serving temperature. Yield: 8 to 10 servings.
