MICRO-COOKED TURKEY

1 (10 lb.) frozen turkey,
defrosted

Place turkey, breast side down, in a baking dish. Do
not use a temperature probe (hot fat can run down the probe and
turn the oven off before turkey is done). Micro-cook, uncov-
ered on 100% (High) for 10 minutes. Reduce power to 50%
(Medium). Micro-cook, uncovered for 24 minutes, checking
occasionally for areas that are browning too fast. (Shield
these areas with foil as they occur and leave the shields on
when turning the turkey.)
Turn turkey on its side. Micro-cook, uncovered, on 50%
(Medium) for 34 minutes. Turn other side up. Micro-cook,
uncovered on 50% (Medium) for 34 minutes, basting and shielding
turkey as needed. Turn breast side up. Micro-cook, uncovered
on 50% (Medium) for 18 to 48 minutes or until drumstick moves
freely at joint and flesh feels very soft when pressed.
Internal temperature of meatiest part of the thigh should
register 185 degrees after thermometer has been left in for 1 minute.
Also, juices should run clear yellow when breast meat under
wing is pierced with a skewer. Cover turkey loosely with foil
and let stand 20 minutes. Makes 10 to 12 servings.
