1 medium cucumber, pared,
seeded and coarsely grated
1 tsp. minced scallion (green
1/2 garlic clove, mashed with
1/4 tsp. salt
1/8 tsp. ground cumin
dash of white pepper
1/2 c. plain lowfat yogurt

Squeeze and discard liquid from cucumber. In bowl
combine cucumber, scallion and seasonings; add yogurt and stir
to combine. Serve at room temperature or chilled.
