2 Tbsp. milk
1 Tbsp. butter
dash of salt and pepper
Beat together the eggs, milk, salt and pepper and set
aside. Add the 1 tablespoon butter to a covered microwave dish
and microwave on High (100%) for 15 to 30 seconds, until
melted. Pour the egg mixture into the dish, cover and micro-
wave on High for 2 to 3 minutes or until set but still moist.
Halfway through the cooking time, loosen the edge of the omelet
with a rubber spatula allowing the uncooked portion to spread
evenly. During the last 30 to 40 seconds of cooking time, add
the filling ingredients you desire to one half of the omelet.
When done microwaving, loosen the omelet with a rubber spatula,
fold in half.
