MICROWAVE CHEESE GRITS

2 1/2 c. water
1 c. quick-cooking grits
3 Tbsp. butter
1 1/2 tsp. salt
1/2 tsp. white pepper
3 eggs, beaten
1 1/2 c. shredded Cheddar
cheese or 1 roll garlic
cheese

Microwave water on High until boiling in a 1 1/2 to
2-quart casserole. Add grits, butter, salt and pepper to
water. Cover with wax paper and cook on High 3 minutes,
stirring once or twice. Stir some of hot grits into beaten
eggs. Stir in 1 cup of cheese and eggs to rest of grits. Mix
well and cook on High 3 to 5 minutes, rotating after half the
time (unless using carousel). Sprinkle remaining cheese on top
of mixture. Cover and cook on High for 2 minutes or until
cheese melts. Let stand 3 to 4 minutes. Serves 6 to 8.
