VANILLA CREAM PUDDING
(Or Pie Filling)
2 c. milk
1/4 scant c. cornstarch
1/3 c. sugar
1/2 tsp. salt
3 egg yolks
2 Tbsp. butter or margarine
1/2 tsp. vanilla

Put milk in glass bowl, (4-cup measuring cup is ideal);
scald in microwave about 2 1/2 minutes. Blend cornstarch,
sugar and salt. Remove milk and blend in cornstarch mixture
gradually with wire whip. Return to microwave and cook 2 to 3
minutes; stir every minute.
Beat egg yolks, blend in and return to microwave for 30
seconds. Beat well and mix in butter and vanilla. Pour in
custard cups or may be used as pie filling, such as banana or
coconut.
