CHICKEN STRIPS ON "STIR FRY" VEGETABLES AND RICE
(Diet Conscious and Microwave)
2 chicken breasts, boned,
skinned and cut in strips
1 envelope Success rice
1 envelope Trim chicken broth
1/2 c. broccoli florets (fresh
or frozen)
1/2 c. sliced mushrooms
1/2 c. julienne sliced carrots
1/2 c. julienne sliced
zucchini
1 small onion chopped
1/4 c. julienned yellow squash
1/4 c. julienned red bell
pepper
1/2 pkg. LaChoy Chinese pea
pods
flavored bread crumbs
2 tsp. garlic bread sprinkle
1/2 tsp. lemon pepper
seasoning
5 Tbsp. water (approximately)
Adolph's unseasoned meat
tenderizer
plastic wrap

For rice: Into water stir 1 envelope of Trim soup.
Then follow microwave instructions and set rice aside, drained.
Use food processor to quickly julienne slice vegetables.
Then stir together in large bowl with 5 tablespoons water,
garlic bread sprinkle and lemon pepper. Tightly cover with
vented plastic wrap. Microwave on High 2 minutes, stir; turn
and microwave 1 minute more, stir. Microwave 2 more minutes or
until just tender.
Get your chicken from grocery boned, skinned and cut in
strips. Arrange on microwave meat rack on 2 layers plastic
wrap. Sprinkle with Adolph's. Cover tightly. Microwave on
Power 7 or Medium-High 2 1/2 minutes. Turn over chicken and
turn pan. Microwave 2 1/2 minutes or cook until it is not
pink, 6 minutes total. Remove; cover with flavored bread
crumbs.
Stir rice and vegetables together in large bowl with
drippings trapped in chicken wrap. Microwave on High 2 min-
utes. Arrange rice and vegetables on serving platter. Top
with chicken. Dust with bread crumbs. Serve.
