WINTER WARM SEAFOOD AND PASTA SALAD (On Spinach leaves - Microwavable) spinach leaves, washed and stripped from stem julienne strips of favorite vegetables: carrots, zucchini, yellow squash, etc. (include some broccoli florets) red and green pepper strips 1/2 c. raisins 1/2 c. chopped walnuts 3 Tbsp. Lite mayonnaise either 1 pkg. processed crabmeat (sea stix) or 1 lb. cooked scallops (bay) 4 servings of colorful confetti noodles, cooked and drained juice of 2 lemons 1 tsp. lemon pepper 2 tsp. garlic powder 2 tsp. dry mustard In a large microwavable bowl mix salad vegetables and cooked, drained pasta and raisins. Chop sea stix or stir in bay scallops cooked (scallops may be boiled not longer than 2 minutes either stove top or microwave 1 minute, or until soft white). Do not overcook. Stir in 3 tablespoons light mayo, juice from 2 lemons, garlic powder, dry mustard, lemon pepper and 1 tablespoon water. Cover with vented plastic wrap. Microwave on High 1 minute; turn, microwave 1 minute more. Arrange cleaned, stripped fresh spinach leaves on 4 salad plates; top with warm salad. Top salad with walnuts. Serve warm.
