BROCCOLI SOUFFLE
(Microwave)
1 (10 oz.) pkg. frozen
broccoli, chopped
2 eggs, slightly beaten
2 Tbsp. flour
1 1/2 c. Brick cheese,
shredded
1 c. creamed cottage cheese
1/2 tsp. salt
1/8 tsp. pepper

Place broccoli in 1 1/2-quart glass casserole. Cover
with lid. Microwave for 6 minutes on High; drain well.
Combine eggs and flour in medium mixing bowl until smooth.
Stir in remaining ingredients and broccoli; pour into glass
casserole. Microwave for 22 to 24 minutes on Simmer or until
almost set in center. Let stand for 5 minutes before serving.
Serves 4.
