CRANBERRY MUFFINS (MICROWAVE) 2 c. all-purpose flour 1/2 c. sugar 1 Tbsp. baking powder 1/2 tsp. salt 1 c. milk 1/4 c. vegetable oil 1 egg, beaten 1 c. cranberries, coarsely chopped 1/2 c. nuts, chopped 1 Tbsp. orange peel, grated 2 Tbsp. sugar 1 tsp. cinnamon 2 Tbsp. nuts, chopped Combine flour, sugar, baking powder and salt in large mixing bowl. Combine milk, oil and egg. Add dry ingredients. Mix until just blended. Fold in cranberries, nuts and 2 tsp. orange peel. Spoon 2 tablespoons of batter into plastic muffin tray (or six - 6 oz. glass custard cups) lined with paper liners. Combine remaining ingredients and sprinkle over muf- fins. Arrange 6 muffins in a circle in Radarange oven if using custard cups. Bake half-dozen in Radarange oven on Full Power for one minute, 10 seconds to 1 minute 20 seconds, or until tops spring back when lightly pressed with finger. Remove muffins from tray or custard cups, and place on cooling rack immediately. Repeat with remaining muffins. Yields about 2 dozen.
