(Serves 6 to 8)
1/2 c. shredded Swiss cheese
1/2 c. shredded Monterey Jack
1/2 c. shredded Cheddar cheese
8 slices bacon, cooked and
2 green onions, chopped
3 eggs
1 c. heavy cream
1/4 tsp. salt
dash of pepper
1 (9-inch) baked pie crust

Sprinkle cheeses in the bottom of baked pastry; top with
crumbled bacon. Combine eggs, cream, salt, pepper and onions;
beat together in a microwave safe bowl; precook on High 1 1/2
minutes, stir. Pour mixture over cheeses and bacon in pie
shell. Microwave on Medium for 12 to 14 minutes. (Center will
still wiggle, but will finish cooking while standing.) Let
stand for 5 to 7 minutes.
