DUTCH OMELET 1 small green pepper (optional) 1 small onion, chopped 1/2 lb. sausage 2 c. frozen hash browns 6 eggs 1/4 c. milk dash of cayenne salt and pepper to taste All cooking is done in 2 quart casserole. Brown onion and sausage in microwave at High 3 1/2 to 5 minutes. Stir once or twice. Remove sausage and onion, drain on paper towel. Discard all but 1 tablespoon fat. Add potatoes to casserole, cover and microwave 4 to 6 minutes on High. Combine eggs, milk, cayenne and pour over potatoes. Sprinkle sausage mixture on top. Microwave uncovered for 3 minutes on High. Lift edges with spatula so uncooked portion spreads evenly. Do not disrupt potatoes. Reduce power to 50 percent (Medium). Microwave 8 to 14 minutes, or until eggs are completely set, rotating dish twice during cooking. Let stand loosely tented with foil 2 minutes before serving.
