EGG SALAD SANDWICH PIZZA|
2 hard-cooked eggs, chopped
1/4 c. pepperoni
2 Tbsp. chili sauce
2 Tbsp. mayonnaise
1 Tbsp. finely chopped onion
1/8 tsp. salt
1/8 tsp. dried basil
1/8 tsp. garlic powder
1/8 tsp. pepper
2 English muffins, split and
1/2 c. Mozzarella cheese
In a glass bowl, combine chopped eggs, pepperoni, chili
sauce, mayonnaise, onion, salt, basil, garlic powder and
pepper. Microcook, uncovered until heated through, about 2
minutes. Spread mixture on the four toasted muffin halves;
sprinkle Mozzarella cheese on top. Microcook until cheese
melts, about 30 to 60 seconds. Serves 2.
