MICROWAVE PEANUT BRITTLE|
1 c. raw peanuts
1 c. granulated sugar
1/2 c. white corn syrup
1/8 tsp. salt
1 tsp. butter or margarine
1 tsp. vanilla extract
1 tsp. baking soda
When using salted peanuts, omit salt and add peanuts
after first 4 minutes of cooking.
Stir together peanuts, sugar, syrup and salt in 1 1/2
quart casserole dish. Place in microwave oven and cook 7 to 8
minutes, stirring well after 4 minutes. Add butter and vanilla
to syrup, blending well. Return to oven and cook 1 to 2
minutes more. Peanuts will be lightly browned and syrup very
hot. Add baking soda and gently stir until light and foamy.
Pour mixture onto lightly greased cookie sheet; let cool 1/2 to
1 hour. When cool, break into small pieces and store in
airtight container. Makes about 1 pound.
