CARROT CASSEROLE (Microwave) sliced carrots diced onions water 1/4 c. butter 1/4 lb. or more Velveeta cheese salt and pepper potato chips Alternate layers of sliced carrots and diced onions in a 8 x 8-inch dish; sprinkle with water. Cover with Saran wrap. Cook on High until tender. Add 1/4 c. butter, salt and pepper to taste, 1/4 pound or more Velveeta cheese, return to oven until cheese melts. Let set a few minutes before serving. Potato chips may be crushed on the top before serving. May also be baked in regular oven.
