1 pkg. (10 oz.) refrigerated pizza crust
1 1/2 c. (6 oz.) shredded Colby Jack cheese, divided
2 c. chopped cooked chicken
1/2 c. barbecue sauce
1/4 c. red onion, thinly sliced
Preheat oven to 425 degrees. Roll pizza crust into a 12-inch circle on a
baking stone or pizza pan (stone works best). Sprinkle one cup of
cheese on crust. In a bowl, combine chicken and barbecue sauce; toss
to coat. Top crust with chicken mixture and onion. Sprinkle with
remaining 1/2 cup cheese. Bake 20 to 25 minutes or until crust is
golden brown. Makes 8 slices.
