3/4 to 1 lb. chicken tenderloins
3/4 to 1 c. barbecue sauce
1/2 c. onion, finely chopped
1/4 c. green pepper, chopped (optional)
1 Tbsp. vegetable oil
1 Pillsbury pizza crust (canned biscuit section)
1 pkg. Mozzarella and Parmesan cheese, mixed (2 cups)
Cut chicken into chunks or strips (1/2-inch). Put oil, chicken,
onion and pepper in frying pan. Cook for 10 minutes. Add 1/4 cup
barbecue sauce. Simmer 10 minutes. Spread pizza crust onto greased
cookie sheet (9 x 13). Pour remainder of barbecue sauce on crust.
Spread evenly. Add chicken mixture. Top with cheese. Bake at 400 degrees
until cheese is melted and crust is brown.
