Creamy Grits: 3/4 c. quick cooking grits 1/4 tsp. salt 3 c. water 1 tub (4. 4 oz.) spreadable light garlic and fine herbs cheese (such as Boursin light) Greens: 1 bag (9 oz.) leafy greens blend (in microwave bag) 1 tsp. olive oil 1/4 tsp. each salt and crushed red pepper Cajun Shrimp: 2 tsp. olive oil 1 lb. large (21 to 30) thawed, frozen, peeled and deveined shrimp 1 tsp. Cajun seasoning Grits: Cook grits and salt in water as package directs. Remove from heat, stir in cheese, cover and set aside. Greens: Place ingredients in a large microwave-safe bowl. Cover with vented plastic wrap and microwave on High 3 minutes or until greens are tender. Toss; cover and set aside. Shrimp: Heat oil in a large nonstick skillet. Add shrimp, sprinkle with Cajun seasoning and saute 2 to 3 minutes until cooked through. Serve with the grits and greens.
