3 to 4 lb. chicken (whole or chicken breasts) 1 c. onions, sauteed 1 c. celery, sauteed 1 stick butter 1 bag cornbread stuffing mix 1 can cream of chicken soup 1 can golden mushroom soup Cook chicken; debone. Cook or saute onions and celery with 1 stick butter in microwave for 5 minutes on High. Remove from oven; add cornbread stuffing mix. Mix well. Layer casserole dish with stuffing mix, chicken and cream of chicken soup, diluted with 1 soup can of the chicken broth. Repeat the layers using the golden mushroom soup, diluted. Top with remaining stuffing mix. You can add more broth if you want casserole more moist. Bake at 350 degrees for 30 minutes.
